Cricket powder is a complete protein and has benefits to boast about, like all 9 essential amino acids, omega 3 and 6, vitamin B12, prebiotic fibre, and iron (plus oats are full of iron, too).

1 cup quick oats
¼ cup Landish Canadian Cricket Powder
1 tsp baking powder
1 tsp vanilla extract
¾ cup oat milk
1 overripe banana
1 tbsp maple syrup
2 eggs

Place the oats, cricket powder, and baking powder into a blender. Blend until oats form a flour texture.

Pour the vanilla extract, oat milk, banana, maple syrup, and eggs into the blender with the dry ingredients and blend until smooth.

Let the batter stand for 5 minutes before cooking.

While the batter is sitting, heat your frying pan to medium-low heat. Grease the pan with avocado oil.

Use ¼ cup batter per pancake. Cook for 2-3 minutes per side until golden brown. Flip when the pancakes start to bubble.

Serve with your favourite toppings like fresh berries, maple syrup, and butter.
