Buckwheat Beauty Pudding

With creamy oat milk, maple syrup, vanilla, and nutmeg, this luscious buckwheat pudding has everything you need to start your day off right, or to give you a pick-me-up when you need it.

Despite its name, buckwheat is not a type of wheat — it’s a seed, harvested from a plant similar to rhubarb. Naturally gluten and sugar-free, this powerful whole grain is high in protein and fibre, while also being rich in antioxidants. To make it even creamier, add an extra splash of oat milk before serving.

Pudding

¼ cup buckwheat
½ cup water
Small pinch of salt
½ cup unsweetened oat milk
½ tbsp maple syrup
¼ tsp vanilla extract
⅛ tsp nutmeg
1 tbsp Landish Marine Collagen Beauty Blend

Toppings

1 tbsp dried cranberries
1 tbsp raw cashews
1 tbsp raw pumpkin seeds

In a small saucepan, combine buckwheat, water, and salt. Set the heat to high and bring to a boil.

Cover and reduce heat to a simmer for 8-10 minutes, until water is completely absorbed and the buckwheat is soft.

Add oat milk, vanilla extract, maple syrup, and nutmeg to the saucepan. Increase heat to medium, cooking uncovered for 5-8 minutes until the mixture thickens.

Add in the Marine Collagen Beauty Blend with a spoon, stirring well.

Pour the pudding into a bowl, and top it with dried cranberries, cashews, and pumpkin seeds. Serve with an extra splash of oat milk for an even creamier treat.
