3 to 4 very ripe bananas (about 1 cup mashed)
2 eggs, beaten
1¼ cups of the flour of your choice
¼ cup Landish Canadian Cricket Powder
​​¼ cup plain or vanilla yogurt
3 tbsp coconut oil
¾ tsp baking powder
1¼ tsp baking soda
1 tsp vanilla
¼ cup rolled oats

Preheat the oven to 350°F (175°C), and grease a 9×5-in loaf pan with coconut oil or butter

In a mixing bowl, mash the ripe bananas with a fork until completely smooth.

In a large mixing bowl, beaten eggs, yogurt, coconut oil, and vanilla ; stir in mashed bananas

Pour batter into your prepared loaf pan and sprinkle the oats on top

In a separate large mixing bowl, mix the cricket powder, flour, baking soda and baking powder; add the dry ingredients and mix until just combined

Bake for 50 min, or until a butter knife inserted into the centre comes out clean

Remove from the oven and let cool in the pan for 5 min before removing

8.

Slice and serve
