2 large apples, skin on and seeded
2 eggs, beaten
2 cups rolled oats, divided
1 cup of your Landish protein of choice (5 plant, cricket, tenebrio)
​​1-2 tbsp Landish Reishi Chaga Chai Latte Mix
2 eggs
1 cup milk of choice
2 tbsp maple syrup
1 tsp baking powder

Preheat the oven to 350°F (175°C). Grease a muffin pan with coconut oil or butter

IMPORTANT: Turn 1 cup rolled oats into a fine flour using a food processor (about 1 minute)

Place the apples in a food processor and pulse for 10-15 seconds. They should have the same texture as if they were shredded

In a large mixing bowl, mix all the ingredients until just combined

Divide the batter among 10 to 12 muffin tins, filling them all the way to the top

Bake for 18 to 20 minutes or until golden brown and a butter knife inserted in the center of one of the muffins comes out clean
