Double Chocolate Protein Cookies

Ingredients:

Wet:⁣

  • ⅓ cup almond butter⁣
  • ⅓ cup coconut oil⁣
  • ⅓ cup  maple syrup⁣
  • 2 tsp pure vanilla extract⁣
  • 2 flax eggs (2 tbsp ground flax and 4 tbsp water)⁣

Dry:⁣

  • 1 cup almond flour⁣
  • ⅓ cup Reishi mushroom chocolate protein powder⁣
  • 2 tbsp tapioca flour ⁣
  • 1 tsp baking soda⁣
  • ½ tsp salt⁣
  • ⅔ cup chocolate chunks ⁣

Add a heaping spoonful of Landish Marine Collagen for even more benefits!


Instructions

Mix wet, add dry, mix until well combined and then add chocolate chips. 

Place in the freezer for 15 minutes and then bake for 12 mins at 350°

Let cool completely (they need to firm up). 

Makes 12 cookies.
