Ingredients


2 to 3 very ripe bananas (about 1 cup mashed)
2 eggs, beaten
1 ¼ cups all purpose flour
¼ cup Landish Cricket Powder
¼ cup plain or vanilla yogurt
¾ cup organic granulated sugar
3 tbsp coconut oil
1 ¼ tsp baking soda
¾ tsp baking powder
1 tsp vanilla

Steps


1.

Preheat the oven to 350°F (175°C), and butter a 9×5-in loaf pan.

In a mixing bowl, mash the ripe bananas with a fork until completely smooth.

3.

In a large mixing bowl, stir in sugar, beaten eggs, yogurt, coconut oil and vanilla. Stir in mashed bananas.

In a separate large mixing bowl, mix the cricket powder, flour, baking soda and baking powder. Add the dry ingredients and mix until just combined. Do not over mix!

5.

Pour batter into your prepared loaf pan. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.

6.

Remove from the oven and let cool in the pan for 5 minutes before removing.

7.

Slice and serve (a bread knife helps to make slices that aren't crumbly).
