Cricket Banana Bread


¼ cup Landish Cricket Powder
1 ¼ cups all purpose flour
1 ¼ tsp baking soda
¾ tsp baking powder
¾ cup organic granulated sugar
2 eggs
¼ cup plain or vanilla yogurt
3 TBSP coconut oil
1 tsp vanilla
1 cup mashed bananas (approx 2 to 3 medium)

Preheat oven to 350F
Butter a 9×5 loaf pan

In a mixing bowl stir the cricket powder, flour, baking soda and baking powder together.
In a separate large mixing bowl blend sugar, eggs, yogurt, oil and vanilla and then blend in the bananas.

Add the dry ingredients and mix until just combined. Do not over mix.

Pour batter into a the buttered loaf pan. Bake in a preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 5 minutes before removing.
